Legal, deposits & compliance

Transparent policies across retainers, service fees, cancellations, insurance, and confidentiality ensure you have full executive coverage.

Payments

  • Deposit: 50% non-refundable retainer (applies to balance)
  • Balance: 7 days prior (events) / 48 hrs prior (dinners)
  • ACH/wire preferred; cards +3.5% fee

Cancellations

  • ≥30 days: retainer → 12-month credit (one reschedule)
  • 29–8 days: retain 50% of total + actuals
  • ≤7 days: 100% labor + actuals

Surcharges

  • Rush ≤72h +35%; same-day +50%
  • Peak/Holidays: +20% (Memorial–Labor Day; Nov–Dec; Art Basel)
  • Field kitchen build: $250–$750

Insurance

  • COI on request; additional insured $50–$150 admin

Tax

  • Sales tax as applicable (food/rentals/services)

Regions

  • Base: NYC, Hamptons, Long Island, Greenwich, Boca, West Palm, Miami, Naples
  • Premiums: Hamptons peak +20%; Palm Beach season +15%
  • Travel: Actuals for tolls/parking or flat $75–$150 urban
